Antiochus Epiphanes

OK, springtime I planted red onion sets and shallot sets. They sprouted and grew and the bulbs expanded. I occasionally snipped off greens and ate them on salads. The greens were growing like crazy then we had a big thunderstorm and they got all beat down. I snipped off the greens and they have not really sprouted again. Will the onions grow any more or should I harvest them now? The red bulbs mostly appear 3 or 4 times the size of what I planted but still seem kind of small. The shallots, I can't tell but they seem like they divided into a bunch of little ones. Some of those look good. I harvested one and it tasted great.
I planted some white onion seeds too, and those have made little bulbs. Will they grow any more? Should I let some go through the winter or pull them all? They may be ok as pearl onions for salad I guess.
Next question: if I'm not eating them immediately, how do I dry them or store them?
